Leftover Roast Stew

When we cook a roast for just the two of us, we usually have a couple of days of leftovers. We recently purchased a Instant Pot and love it. On Sunday we made a roast and on Tuesday I created a quick leftover stew. My roast was a beef sirloin tip roast with a side of mashed potatoes and broccoli. I separated the meat from the sides. I literally threw everything in a pan and heated it up. I am a big believer on leftovers. I try to spice up the leftovers by creating them into something new. I don’t like to spend too much time in the kitchen after a long day, I rather be relaxing with family or friends. I love going for a walk with Walter and my fiancé.

Ingredients

  • Cubed beef sirloin tip roast
  • Leftover potatoes from the roast
  • Fresh chopped onions
  • Fresh chopped tomatoes
  • Small bag of frozen peas
  • 1/2 cup of beef broth
    • (more or less, depending on how much beef you have)
  • Teaspoon of Cumin
  • Salt & pepper
